Smoked Marinated Chicken Skewers
Smoked and marinated chicken skewers make a perfect food for summer cookouts or for an easy dinner. Lightly charred smokiness makes these kabobs simply irresistible.

The chicken has a slight smoky flavor, with a moderate degree of smokiness.

Ingredients

  • 3 pounds skinless and boneless chicken
  • 1/2 cup soy sauce
  • 1/2 cup raw honey
  • 6 TBS roasted sesame oil
  • 3 TBS of orange juice
  • 3 cloves of garlic
  • 1 tsp minced ginger
  • 1 tsp black pepper powder
  • 16 ounces of mushrooms
  • 1 large or 2 medium red or green bell peppers

    Cooking Instructions

    1. Prepare the Ingredients:

    • Thaw the chicken and cut it into chunks. Chop the bell peppers and mushrooms into similar-sized chunks.
    • In a bowl, mix soy sauce, raw honey, roasted sesame oil, orange juice, minced garlic, minced ginger, black pepper, and a pinch of salt. Marinate the chicken in this mixture for at least 30 minutes.

     

    2. Skewer and Preheat

    • Thread the marinated chicken, bell peppers, and mushrooms evenly onto skewers, then set them aside.
    • Soak wood chips in water for 15-20 minutes and place them into the smoker. Preheat the smoker to 300°F (150°C) for 30 minutes. 

     

    3. Smoke the Skewers:

    • Place the chicken skewers into the preheated smoker. Smoke at 300°F (150°C) for 40-50 minutes, or until the chicken's internal temperature reaches 165°F (73.9°C). Use a meat thermometer to check the temperature.
    • If the chicken hasn’t reached the desired temperature, continue smoking for an additional 5-10 minutes, checking periodically.

     

    4. Enhance the Flavor:

    • Brush more sauce onto the skewers and smoke for another 10 minutes at 300°F (150°C) to deepen the flavor.
    5. Final Touch and Serve:
    • Remove the skewers from the smoker and let them rest for a few minutes before serving.
    • Optional: Sear the skewers over a hot flame for 1-2 minutes per side for additional caramelization.
    *USDA safe minimum for chicken (non-ground) - 165 °F (73.9 °C)
