Simple Potato Salad
    A simple potato salad is a perfect side dish for any smoked meat.

    Ingredients

    • 3 pounds of waxy white potatoes (peeled or washed with skin on)
    • Sea salt
    • 1 cup of good mayonnaise
    • 1/4 cup plain kefir or soft yogurt
    • 3 TBS whole grain brown mustard
    • 2 stalks diced celery
    • 1/3 cup diced red onion
    • Sea salt and cracked black pepper to taste
    • 3 TBS chopped fresh dill or tarragon (optional)

        Cooking Instructions

        1. Prepare the Potatoes

        • Place the potatoes and 1 tablespoon of salt into a large pot of cold water.
        • Bring to a rolling boil, then lower the heat to a simmer. Cook for 15 minutes, or until the potatoes are just tender when pierced with a knife or fork. Be careful not to overcook to avoid mushiness.
        • Drain in a colander and let cool until safe to handle.

         

        2. Make the Dressing:

        • In a large bowl, whisk together mayonnaise, kefir, mustard, fresh herbs (if using), 1 teaspoon of salt, and 1 teaspoon of black pepper until smooth.

           

          3. Prepare the Vegetables:

          • Dice the celery and red onion into small, uniform pieces to ensure even distribution throughout the salad.

           

          4. Combine Ingredients:

          • Cut the cooled potatoes into bite-sized chunks (about 1 to 1-1/2 inches). Add the potatoes, diced celery, and red onion to the bowl with the dressing. Gently toss until everything is evenly coated.

           

          5. Chill and Serve:

          • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld, or serve at room temperature if preferred.

           

          6. Enjoy:

          • Serve the potato salad alongside slices of juicy, smoky tri-tip for a perfect BBQ meal.
