Ingredients
- 24 large white mushrooms (without stems)
- 1 small onion, chopped
- 2 cloves of garlic, chopped
- 3/4 cup Italian seasoned breadcrumbs
- 3/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, finely sliced
- 1/3 cup premium extra virgin olive oil (EVOO)
- 1 tsp freshly ground black pepper
- 1/2 tsp coarse sea salt
- Disposable baking sheet

Cooking Instructions
1. Prepare the Mushrooms:

Clean the mushroom caps with a damp cloth to remove dirt.

Trim and discard the base of the stems, then finely chop the remaining stems into small cubes.
2. Sauté the Filling Ingredients:

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Sauté the onion, chopped mushroom stems, and garlic until softened and fragrant.

Set aside to cool.
3. Preheat the Smoker:

Preheat the smoker to 250°F (121°C) and ensure the vent is open.

Add soaked sawdust (such as alder or pecan) to the smoker’s tray, and fill the water tray to maintain humidity.
4. Prepare the Stuffing:

In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, and the cooled sautéed mixture. Mix well.

Fill each mushroom cap with the stuffing mixture, pressing gently to ensure it stays in place.

Arrange the stuffed mushrooms on a lightly greased disposable baking sheet and drizzle with 1 tablespoon of olive oil.
5. Smoke and Serve:

Place the baking sheet with mushrooms in the smoker.

Smoke at 250°F (121°C) for 45 minutes, or until the mushrooms are tender and the stuffing is golden.
