Classic Smoked Stuffed Mushrooms

Ingredients

  • 24 large white mushrooms (without stems)
  • 1 small onion, chopped
  • 2 cloves of garlic, chopped
  • 3/4 cup Italian seasoned breadcrumbs
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, finely sliced
  • 1/3 cup premium extra virgin olive oil (EVOO)
  • 1 tsp freshly ground black pepper
  • 1/2 tsp coarse sea salt
  • Disposable baking sheet

Cooking Instructions

1. Prepare the Mushrooms:

  • Clean the mushroom caps with a damp cloth to remove dirt.
  • Trim and discard the base of the stems, then finely chop the remaining stems into small cubes.


2. Sauté the Filling Ingredients:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Sauté the onion, chopped mushroom stems, and garlic until softened and fragrant.
  • Set aside to cool. 


3. Preheat the Smoker:

  • Preheat the smoker to 250°F (121°C) and ensure the vent is open.
  • Add soaked sawdust (such as alder or pecan) to the smoker’s tray, and fill the water tray to maintain humidity.

 

4. Prepare the Stuffing:

  • In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, and the cooled sautéed mixture. Mix well.
  • Fill each mushroom cap with the stuffing mixture, pressing gently to ensure it stays in place.
  • Arrange the stuffed mushrooms on a lightly greased disposable baking sheet and drizzle with 1 tablespoon of olive oil.


5. Smoke and Serve:

  • Place the baking sheet with mushrooms in the smoker.
  • Smoke at 250°F (121°C) for 45 minutes, or until the mushrooms are tender and the stuffing is golden.
  • Remove from the smoker and let cool for a few minutes before serving. Enjoy it as a flavorful appetizer or side dish!
